Vegetarian Taco Soup

Ingredients:

  • 1 can corn kernels, drained
  • 1 can kidney or navy beans, drained
  • 1 can pinto beans, drained
  • 1 (14 oz) can stewed tomatoes - do not drain
  • 1 package taco seasoning mix
  • 1/4 tsp cumin
  • 3/4 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • Optional: 1 (7 oz) can green chiles
  • Other optional garnish items: tortilla or corn chips, grated cheese, chopped green onions, sour cream, cilantro

Instructions:

  1. Combine all ingredients (except optional garnish items) in a crock pot/slow cooker. 
  2. Cook on low for 8-10 hours or on high for 3-4 hours.

Note: This is a thicker soup. If you would like to thin it out, add a little vegetable broth.
