Easy Meatless Manicotti

Ingredients:

  • 2 cups shredded mozzarella, divided
  • 16 oz carton fat-free cottage cheese
  • 10 oz package frozen spinach, thawed/drained/dry
  • 1/4 cup grated parmesan cheese
  • 1.5 tsp dried oregano
  • 1/4 tsp each salt and pepper
  • 8 oz package manicotti shells
  • 26 oz jar spaghetti sauce
  • Cooking spray
  • 1 cup water

Instructions:

  1.  Preheat oven to 375 degrees.
  2. Combine 1.5 cups mozzarella, cottage cheese, spinach, parmesan cheese, dried oregano, salt and pepper in a medium bowl.
  3. Spoon about 3 tbsp of the cheese mixture into each uncooked manicotti shell.
  4. Pour half of the jar of spaghetti sauce in a 9"x13" baking pan (coated with cooking spray).
  5. Arrange the stuffed shells over the sauce in the pan and top with the remaining sauce.
  6. Pour 1 cup of water into the dish.
  7. Sprinkle the remaining 1/2 cup of mozzarella evenly over the top.
  8. Cover tightly with aluminum foil. Bake for 1 hour or until the shells are tender.
  9. Let stand for 10 minutes before serving.

Add a side dish of broccoli or roasted bell peppers!
